"When I came to the U.S. in 2001, I made Ypsilanti home.
The one thing I kept missing was good Lebanese food. If my kids and I wanted the kind of food we knew and loved, we'd drive 45 minutes to Dearborn, eat, and drive all the way back. After doing that enough times, I thought, there has to be a better way. And if there wasn't one, I was going to make one.
I went back to Lebanon and spent a month learning from a chef who cooked for thousands of people at a time. I learned his recipes, his techniques, and what it takes to get the food right every time. Then I came back home, bought a food truck, and put what I'd learned to work.
That's how Shawarma Chef started.
Today, I get to serve the food I grew up with to the community I've been part of for more than 20 years — and I get to do it my way: good Lebanese food, made right, served to good people."
